Blackened Salmon

If you don’t already have a recipe for blackened fish, you’re overdue. We’ve used salmon here, but any firm fish will do. Serve with our Citrus Bulgur and any green vegetable. Serves 4.

Recipe Ingredients

  • 1 pound salmon fillet
  • ¼ teaspoon thyme
  • ¼ teaspoon oregano
  • 1 teaspoon paprika
  • ¼ teaspoon cayenne
  • Dash of black pepper
  • Lemon slices
  • Parsley sprigs

Recipe Directions

  1. Preheat broiler.
  2. Mix together all herbs. Sprinkle over each side of salmon.
  3. Broil salmon 4-6 inches from heat for 5-7 minutes or until fish is cooked throughout.
  4. Divide into 4 servings. Garnish with parsley and lemon slices.
